Fabiolous Tuesday - Zucchini Carbonara

Nerano is a village on the Amalfi coast

known for the Zucchini Carbonara.

This dish is one of my wife's favorite dishes so while

I do not have a client with me tonight - I am cooking for my #1 fan!

Clean and slice the zucchini and white onion.

Grill in a pan with extra-virgin olive oil.

Grill until it turns a nice brown color.



In a bowl, mix egg yolk and plenty of pecorino cheese.
After preparing your fresh pasta (see my recipe) or
cook the pasta in a pan with the bacon. The smell
alone will make your mouth water!!
Pour the pasta and bacon mixture into the
bowl of pre-mixed egg yolk, pecorino cheese and
parmesan cheese.

Mix well adding the finely chopped grilled
zucchini, grilled onion and fresh black pepper.
Add parsley.

Easy authentic Italian dish that won't disappoint!
