Mezze Maniche with Zucchini,Tomatoes and Shrimp

I know yesterday was Memorial Day in America.
So I want to express my gratitude
for all those who have served in America.
Tomorrow, June 2nd is Feste delle Republica,
celebrating the founding of our republic!
Happy Birthday Italy!!
On to the recipe:
Slice the zucchini into thin slices and
fry the zucchini in the pan of
extra-virgin olive oil.
Add cubed, fresh Roma tomatoes.
Add white wine to simmer.




When it reduces add more white wine.


Cook the fresh pasta in boiling water.
Do not overcook.
Add the pasta to the zucchini and tomatoes.
Add a cup of the left-over boiling water.

Add shrimp.

Sprinkle with fresh chopped parsley!
